Whilst having an intense craving for some Nestle Toll House cookies, I came across this post by No. 2 Pencil, giving a recipe for only two cookies. That got me all excited! Instead of having to figure out how to make a small batch of cookies from a recipe for a big batch of cookies, I just had all the measurements sorted out for me. It just wasn't healthy enough...
So here is my version.
Ingredients:
- 2 tbsp coconut oil.
- 3 tbsp muscovado or dark brown pure cane sugar.
- Pinch of salt.
- 1/4 tsp vanilla extract.
- 2 tbsp peanut butter.
- 1 egg yolk (you can save the egg white for a DIY face treatment!)
- 1/4 tsp baking soda.
- 2 tbsp whole wheat flour (or almond flour if you prefer).
- A couple of semi-sweet chocolate chips, or butterscotch chips, or white chocolate chips, or crushed nuts... It's up to you!
Now, cookie making time!
- Preheat oven to 180°C.
- Spray a small baking sheet with olive oil (olive oil in spray form, ahh such a genius invention!).
- Mix wet and dry ingredients separately, then combine, and mix until smooth.
- Add any chips or nuts.
- Now, here it's your choice how many you want to make. You can either make 2 large cookies, or half a dozen small cookies.
- Make cookie dough balls and place on the baking sheet, then flatten out gently (not too thin!).
- Bake for about 8-9 minutes, until edges turn golden brown.
- Remove baking sheet from oven, and let cool before you touch the cookies, otherwise they will fall apart! The cookies will remain pretty soft, depending on how thin you've made them.
- Have a cookie, save a cookie for a post-workout snack and share the rest! (:
